One of the least expensive ways of doing this is to buy a small Christmas tree and cut it into appropriate sized lengths. These can then be added to your decorations.

Another popular theme for winter wedding centerpieces is to include icicles. You can buy Christmas decorations in this shape that you can use to decorate your centerpiece. If you're getting married after Christmas you may be able to find them at a good price.
